
Mohujos at Home Chicken Piri Piri recipe
To make the taste of Mohujos at home a little more authentic, here is a little recipe you could try.
Take 2 chicken breasts and cut into strips length ways, pop into a frying pan with a good helping of extra virgin olive oil and cook until browned off a little, turn the heat down and let the chicken cook through completely. In a separate pan chop a green and red pepper and half a medium sized onion into slices and sweat off, with a little bit of olive oil, till soft, don’t over cook as you don’t want them to burn. Add to this half a tin of chopped and peeled plum tomatoes and a sprinkle of ground cumin and a touch of salt and pepper to season and let it cook through for about 10 mins then add about a cup of water and simmer for about 10 minutes. If you have a hand blender the next bit is easy, when cooked through blend the ingredients and put back on the heat. If you don’t have a hand blender then just cut the peppers and onion smaller. With the sauce now back in the pan you can add a touch of corn flour paste to thicken it, (just a teaspoon of corn flour mixed with water to make a smooth paste).
While the sauce is still slowly simmering away add a chopped garlic clove and a teaspoon or 2 of the piri piri sauce to the chicken and cook through, don't over cook or have the pan too hot as this will burn the garlic, add more piri piri sauce if you want more heat intensity or less if you prefer it a little more subtle.
After the chicken has cooked through and the piri sauce has coated the chicken add the tomato sauce to the pan and cook till it's simmering. Leave to simmer for about 5 mins or so and then it will be ready to serve. For more portions add more chicken and more sauce.
Best saved straight away with fresh cooked rice or homemade chips, garnish with a sprig of fresh coriander.
